The key is to drill the hole first, say 1/2", then slide the wooden blank onto a 1/2" mandrel and do your turning. It forces the hole to be perfectly centered.

Turning wood fishing handles is really no different than making pens.
Just do a search for pen making. There are many many good sources of videos and instructions for pen making.

Gary, I did an article in the Feb. edition of Rodmaker on wooden grips. Most were painted and had a fish theme the basics are the same. You can design what you want.

There will be many who disagree - but you are taking a chance that the blank will fail at the forward end of the grip due to the creation of a "hard-spot" there at the end of the grip. This is more a blank loads into the butt - the more chance that this is a risk.
