On the Asian made side, I'd suggest an LLBean Pocket Water reel. Made from machined aluminum and with a great warranty. At $79 and just under 4oz, it's hard to beat for a 5wt rod.
On the American made side, I'd go with a gently used Ross Colorado #2, but you'd probably have difficulty sourcing multiple reels.
Both reels are Click Pawl and should last a long time with even just minimal mai

I've not built many rods, but you might try to find an orange metallic thread. I've use blue (Japanese silk) metallic thread, and it didn't change noticeably after applying finish. NCP is another option.

I've been pleased with my 10wt RX7 IF9010 rod. It was much straighter than I had any reason to expect (ie, totally straight), and the color was the typical matte graphite.
