Diamond II Epoxy UV

I have never tried this Diamond 2 epoxy with the UV in it, does the UV just mean that it has glitter in it, or does it just have sunlight protection in it.

Keeps it from going amber on you as fast as all epoxies will do sooner or later.

UV protection means it won't degrade as fast due to UV light. It doesn't really affect how quickly an epoxy will turn amber/yellow. All epoxies will turn a bit darker over time, both in the bottle and on the rod.
