Many of us use TruOil, it is a gunstock finish that produce either a semi-gloss or gloss finish, very waterproof and easy to use if directions are followed.

A couple of other choices are Permagloss or Lumaseal. These are clear urethane finishes that are very hard. I also sometimes use a version of wood turners finish that is a combination of shellac, linseed and walnut oil. This finish is less durable but easy to apply on the lathe when the piece is turning.

Permagloss and Lumiseal can also be applied while turning I think it was Riley Rods on one of his carbon handles has a vidio on doing this with a sponge paint brush Very quick

With walnut handles, I would recommend that after you have it to final shape and sanded, that you take a cloth dampened with hot water and wrap around the handle for about a minute to raise the grain, then give a light sanding with 400 grit. I then repeat and use 600 grit. When dry then apply thin coats of Perma Gloss or Lumiseal. I have used as many as twelve coats. It is then just about indestructible.

Another very durable option is to use two coats of guide coating - sanding between coats to remove the nubs from the raised grain of the first coat. Simple, easy to do and material is always on hand.

Spar urathane plain and simple, dip or apply either way works great.
