would a butt guide of 5mm, and then4's then 3mm, all the way to the tip, be to small for a 7'10' flippin rod spiral wrapped?

The 5mm might be a bit low depending on line type, line weight, reel height, and load profile of the rod. The rest will work fine. A static load test using the reel / line combo would reveal any issues with the 5mm butt guide. You may want to consider using a std braced frame tip for flipping.

To Jim's point, the 5mm will work great. The height of line may be overcome by moving the guide further up the blank. "Butt" guides can go a lot further up the rod than many builders place them.

If the rod is truely for flipping, casting is not an issue nor going to occur. You just want guides that can handle the abuse of winching in the big one and micros (4 and 3mm you asked about) will handle that absolutely fine.

Another thing to consider is that; if you don't want to move the guide way up the blank. Choosing a slightly taller guide for your stripper guide will create more space between the line and blank allowing you clearance space between the line and blank.
Permitting you to grab the line for flipping with out continually grabbing the blank.

Depending on the persons finger size. I will use an 8 or 10mm double ft. guide for my stripper guides on flipping sticks and 5 or 6 on most others.
