I would use either Rod Bond or Titebond III for the checkerboard. I use @#$%& Tru-oil for the finish.

Steve - I've been very happy with the urethane / oil product from Woodcrafters. I use 5-6 thin coats and use fine Scotchbrite in between the coats. Finish is durable because of the urethane.

I should have asked what exotic wood you are intending to use. As you will find if you do a search, some of the exotics, especially in the Rosewood family (eg, Cocobollo), have a natural oiliness and resin content that make it hard for many finishes to completely dry. If this is the case for your project, you will also find via a search techniques for resolving the problem - soaking in denatured alcohol or polishing versue finishing.
