restoration of old rods

hey guys
i am new to this and need some help if ya dont mind.
i have two old surf rods two piece in 10 ft that my uncle gave me when i was about 10 or 12.
this is what im starting on for practice to learn how.every thing needs replaced except the reel seats.
i am going to replace the cork grips with foam ones and change the guides.
what do i strip the finish off the blank with?
and determine what size guides to put back on?
one will have a garcia 6000 on it and the other im going to make a jigg pole out of it for crappie fishing
so it will have a small spinning reel on it .
thanks for any help yall can give me !
