Gotta love Fluke. What rods are you using? I know I've asked several times, and lied when I said I'd send you some jigs a while back. Sorry about that. Have you tried the GUSA 702 or 703DHX - these are great for Fluking, my friend used the 702 this summer on tons of Fluke to 9 1/2#'s - loads of fun.

Used the short (6-ft) three piece rod in the foreground. I got the blank from Andy a year or so ago and it's turned into a great little rod for yanking flounder. I think it was an AllStar mag-bass closeout blank. It's pretty stiff which helps lift the flounder out of the water onto the bulkhead without a net. I was using 1/8 oz jig heads with Berkley Gulp plastics.

The MB blanks are perfect for that. Try gutting & scaling the fish, cut a few slits in teh skin & rub with whatever spices you like. Bake it whole in teh oven & peel the skin off (unless you like eating skin, just make sure it's crispy). No wasted meat, and much less filetting time - tasty and 100% healthy.

Same method in south Texas....small ones get scaled, stuffed, and baked...larger ones get filleted (sp?).
